MEXICO - WASHED
CORO — Cafeticultores Orgánicos de Oaxaca — is a cooperative of around 2,500 smallholder farmers spread across seven producing regions of Oaxaca. Nearly half of its members are women, and the cooperative represents six indigenous ethnic groups. Founded in 2007, CORO built a network of 15 regional warehouses so that small-scale growers, most farming less than a hectare, can access stable markets, organic certification, and fair prices that would otherwise be out of reach. algrano
This lot comes from the Sierra Sur highlands at 1,400 meters, where cool nights and volcanic soils slow cherry development and concentrate sweetness. Fully washed and sun-dried, it cups as fudge, stewed plum, and butterscotch — rich and grounded, with that characteristic Oaxacan depth.
