When Fausto Romo first planted his Sidra trees, he sold five of his ten dairy cows to fund the dream. Two years later, those trees began to bear fruit—and with them came stability, beauty, and a newfound love for coffee.

The Sidra variety, a rare Ecuadorian hybrid of Bourbon and Typica, thrives in Fausto’s cool, cloud-forest climate. His washed process highlights the variety’s natural perfume and radiant sweetness—balancing golden raisin, dried lime, and pineapple fizz with a lively, candy-like acidity.
