GUATEMALA WASHED
This coffee comes from ACODIHUE, a Fair Trade and Organic certified cooperative organized in 1996 around the Cuchumatanes mountains of Huehuetenango. Seventy-one percent of its producers are Indigenous women working smallholder plots at around 1,500 meters, processing the way their families always have — natural fermentation, hand sorting, sun drying. The result is a familiar Guatemalan profile turned bright: cocoa and praline up front, a candied tartness underneath.
